Deep ruby in color with a purple hue, the Unfiltered Cabernet Sauvignon exhibits red berry notes—such as currant and cherry—followed by Mediterranean aromatic herbs, hints of tobacco leaf, and cedar on the nose. The palate boasts pomegranate notes, and finishes with graphite-like, minerally tannins.

Based on an Old World style, Newton’s winemaking techniques include natural fermentation and bottling without filtration. These traditions preserve the natural depth of flavor, bouquet and structure that can be found in every Newton Unfiltered Cabernet Sauvignon bottle. Dark & inky in color. Aromas of black currant, violets, mocha, aniseed and wild herbs blend seamlessly. Palate: full bodied with rich saturated black fruits supported by a chocolatey richness and graphite -like minerally tannins. Intense and powerful, yet with a freshness and clarity of fruit, the palate is long and fine with abundant fruit and impeccable length.

Once harvested and hand sorted, our Cabernet Sauvignon grapes were sent through an optical sorter, which inspected each individual berry to ensure perfect, uniform ripeness. The grape must underwent five days of cold maceration, followed by seven days of fermentation. To develop additional complexity, the wine rested on its skins for as many as 20 days before being pressed and aged for 14 months in French oak barrels, 15% of which were new.
